Sweet Potato & Asparagus Pizza

Doesn’t really look like a pizza but it was absolutely mouth-watering and SO easy to make!

1 bag refrigerated pizza dough

1 large sweet potato, cut into thin rounds

1 cup loose arugula

1/2 bunch asparagus, cut into 3 inch pieces and sliced thin (about 1 1/2 cup)

1 cup ricotta

2/3 cup grated Parmesan cheese

1 tbsp dried oregano

2 tbsp olive oil

1 garlic clove, minced

Salt & pepper to taste

  • Preheat oven to 450 degrees
  • Stretch out dough onto a thin baking sheet
  • Toss sweet potato rounds with 1 tbsp oil, salt and pepper and set aside
  • In a small frying pan, saute asparagus in another tbsp of oil and the garlic, for about 5 minutes
  • Spread ricotta on top of pizza, then layer the sweet potato rounds and asparagus on top of that, and then evenly sprinkle oregano over the whole pizza
  • Bake for 15-18 minutes or until sweet potatoes are soft, then add Parmesan and cook for an additional minute
  • Remove from heat, evenly distribute arugula on top of pizza then set aside for 5 minutes before serving
