Surprisingly creamy and flavorful, especially for a raw soup!
2 avocados, peeled and pitted
1 1/2 cups water
3/4 of a cucumber, chopped (about 1 cup)
2 celery stalks
Juice of 1 lime
1/4 cup chopped cilantro
1 tsp ground coriander
1/2 tsp sea salt
(I added a little coconut milk just to make it a bit richer)
- Combine all ingredients in a blender and mix until creamy!
