Quinoa, Corn & Black Bean Cilantro Salad


All of our favorite vegan ingredients rolled into one simple, delicious dish!

2 cups cooked black beans

2 cups cooked quinoa

1 cup fresh cilantro, chopped

1 cup organic frozen corn

3/4 cup green onions, chopped

1/2 cup red pepper, chopped

2 tbsp fresh chives

2 tbsp lime juice

1 tbsp olive oil

1 tsp sea salt

1/2 tsp black pepper

1/4 tsp cayenne pepper

  • In a frying pan over medium heat, cook olive oil for 1 minute
  • Add corn and cayenne pepper and cook for 7-8 minutes or until corn begins to char a little
  • When they’re cooked, toss all ingredients together and serve!
