Barley, Cherry & Celery Salad

Standard

It’s official-barley is my favoritest grain there is.

This salad is super simple and very refreshing for summer nights and quick lunches.

3 cups barley, cooked

3 cups chopped Boston or bib lettuce

1 1/2 cups chopped fresh arugula

1 1/2 cups celery, chopped

1 1/2 cups dried cherries

1 1/2 cups walnuts, chopped

1/4 cup fresh parsley, chopped

3 tbsp olive oil

2 tbsp apple cider vinegar

1/2 tsp sea salt

  • Toss all ingredients together and that’s it!

    • oh wow, thanks for pointing that out! we used cranberries in so many recipes, we listed that instead of dried cherries…much appreciated!
