Chickpea, Green Onion & Spinach Patties

For someone who despised burger, I am LOVING trying out new veggie and bean orientated versions.  This one tastes vaguely similar to our shredded vegetable variations, but the spinach and green onions give it a more potent taste! And it gave us an excuse to use our new food processor 🙂

2 ½ cups chickpeas, cooked

3 eggs

1 cup breadcrumbs

¼ cup green onions, chopped

1 ½ cups fresh spinach, chopped

3 gloves garlic, minced

1 cayenne pepper, minced

1 tsp fresh parsley, minced

Olive oil for frying

Whole wheat flour for coating

Salt & pepper to taste

             

  • In a food processor, combine chickpeas, eggs, salt and pepper and blend until smooth and chunky, almost a consistency similar to hummus
  • Put chickpea mixture in a large bowl, then add breadcrumbs, green onions, spinach, garlic and cayenne, and blend together
  • Shape into burger sized patties and lightly coat with whole wheat flour before frying
  • In a frying pan over medium heat, cook patties in olive oil on both sides until golden brown, about 3 minutes on each side
