Margherita Pizza

Standard

1 batch whole wheat honey pizza dough

1 cup meatless Italian sauce 

6 oz fresh mozzarella cheese, sliced

1 tomato, sliced

1/4 cup fresh basil leaves

Whole wheat flour for dusting

  • Preheat oven to 350 degrees
  • Stretch out pizza dough onto baking sheet, using floour so it doesn’t stick
  • Evenly distribute sauce over pizza dough
  • Top sauce with a layer of basil, then a layer of tomato slices and finally top with mozzarella 
  • Bake at 350 degrees for 20-25 minnutes or until cheese is bubbling and browning

      

Sweet Potato & Beet Chips

I love new kitchen gadgets!

Slicing by hand can make life extremely difficult, especially when it comes to raw food and meals, so I’d been wanting a mandoline for quite some time now.  We finally found a great, decently priced one on Amazon and I love, love LOVE it!  Yes, Jim and I have been sustained injuries because we were quick to start using it before we knew how to operate it properly, but a few band aids later, we had some yummy dehydrated veggie chips. And can I just say, how gorgeous beets are?  The color and natural design of their interior is seriously beautiful!

2 sweet potatoes, sliced thin

2 large beets, sliced thin

1/4 cup extra virgin olive oil

1 tsp sea salt

1/4 tsp black pepper

1 cayenne pepper, minced

  • In a bowl, toss veggie slices with oil, salt, pepper and cayenne, until evenly distributed
  • Place on trays and dehydrate between 108 and 115 degrees for 12 hours

     

     

     

Farmer’s Markets & Our Garden

I had high hopes for our garden this year, and things definetely did NOT go the way I had planned.  Without any time to tend to the vegetables up at Jim’s parents houses, we were left with hardly any produce the entire summer.  However, we were quite proud of a hearty, wildly growing plant of kale, a huge red cabbage one, alot of grogeous yellow chard, some eggplant and a few spotty green bell peppers.  Still better than nothing, but I hope next year works out better!

Farmer’s market in the area however, have been a complete success! August and Septemeber are absolutely stellar months for the markets and I’ve found that Waltham actually has one of the best around.  I’ve picked up large batches of organic veggies for a fraction of the cost I find them at Whole Foods.  Plus, there’s no better feeling than buying super local and supporting smaller, close to home business!
